2 tbsps butter.

1 leek, white and light-green component only,.

extensively cleansed and carefully cut.

8 sun-dried tomatoes crammed oil, drained and coarsely cut.

1 lot arugula, leaves just, extensively cleaned and julienned.

salt and recently ground pepper.

1 monkfish fillet, concerning 2 pounds.

1/4 mug extra-virgin olive oil, split.

8 ozs white button mushrooms, peeled off and quartered.

1/2 cup dry white wine.

In a competent over medium warmth, melt the butter. Add the leek, and sautu00c3 u00a9 up until soft, about 4 mins. Take out from the heat, and add the sun-dried tomatoes and arugula. Period with salt and pepper, mix well, and set aside.

Butterfly the monkfish fillet so that there are two flaps of fish that are hinged at the facility. Season with salt and pepper, and place the tomato-leek combination cheek by jowl. Fold up the various other flap over, and secure by linking the whole fillet with butcher’s string. Not that simple, however really yummy !!
